Boeuf Bourguignon de Chablis

BOEUF BOURGUIGNON A LA MODE DE CHABLIS

Voici aujourd'hui ma version du célèbre Boeuf Bourguignon. Ma recette est très inspirée de celle de ma grand-mère, qui a vécu très longtemps dans l'Yonne mais aussi de mes nombreux voyages en terre bourguignonne, notamment dans la jolie petite ville de Chablis. Pour une belle marmite il vous faut : 800 gr de viande de boeuf spéciale bourguignon (plus elle sera "filandreuse" meilleure elle sera), 15 cl de vin blanc de Chablis, 15 cl de vin rouge de Meursault, 5 belles carottes, 3 beaux champignons de Paris frais, 1 botte de 5 petits oignons nouveaux, 2 cuillères à soupe de concentré de tomates, 1 feuille de laurier, quelques branches de thym, 1 cuillère à café de 4 épices, noix de muscade, 1 cuillère de fécule, huile, sel et poivre.

Comencez par découper les légumes : coupez les carottes en rondelles, les champignons en lamelles et émicés les oignons frais ainsi que le début des leurs tiges (la ciboule). Réservez. Si ce n'est pas déjà fait par votre boucher, découpez la viande en cube assez épais. Prenez une marmite et faites-y chauffer 3 cuillères d'huile (j'ai choisi un mélange huile d'olives et huile de colza). Une fois l'huile bien chaude, faites-y revenir les oignons. Quand les oignons deviennent fondant, faites cuire la viande à feu moyen. Quand le boeuf est cuit, ajoutez les carottes. Versez la fécule afin de lier la sauce. Confectionnez un bouquet garni avec le laurier et le thym puis jetez le dans la marmite. Ajoutez le concentré de tomates puis le vin. Remuez bien à la cuillère en bois. Assaisonnez le tout avec les épices selon votre goût et couvrez d'eau à hauteur de la viande. Laissez mijoter durant 30 à 40 minutes. Ou jusqu'à ce que le jus est réduit de moitié. Corrigez l'assaisonnement avant de servir.

NB : Servez avec le même vin que vous avez utilisez pour la préparation de votre plat.
